Healthier Buttermilk Banana Bread

We love Banana Bread at my house, so it is the first thing I will make when we have bananas that have gotten to ripe. I have my absolute favorite banana bread recipe at Mels Kitchen Cafe that we have made hundreds of times. Lately I have been experimenting with trying to make it just a little bit healthier for my family. This time it turned out great my kids couldn’t even tell that I had done anything different. So if you are looking for a delicious banana bread recipe that won’t spike your blood sugar as much, this is it.

If you don’t have buttermilk on hand you can make your own by adding vinegar or lemon juice to your milk, letting it sit for about 10-15 minutes. Or you can substitute yogurt or kefir in its place, I have done this multiple times with great success.

Buttermilk Banana Bread

Ingredients
  

  • 1/2 cup coconut oil melted
  • 1/2 cup coconut sugar
  • 1/4 cup pure maple syrup
  • 1 cup mashed bananas 3 bananas
  • 4 T. buttermilk
  • 1/2 tsp vanilla extract
  • 1 3/4 cup all-purpose flour
  • 1/4 cup ground flaxseeds
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/8 tsp baking soda
  • 1 handful dark chocolate chips optional

Instructions
 

  • Preheat oven to 350 degrees. Grease 1 large bread loaf pan and set aside.
  • In a large bowl, cream oil and sugars until combined. Add eggs, bananas, buttermilk, and vanilla until the batter is well mixed.
  • In separate bowl whisk flour, flaxseeds, baking powder, salt and soda together. Mix wet ingredients with dry ingredients until combined. Pour batter into prepared pan.
  • Bake for 50-55 minutes or until toothpick comes out clean. Let cool and Enjoy
