Berry Lime Fluff Pie

This is a perfect summer dessert for your next event or just for a special easy treat for your family. Though I don’t encourage having dessert every night we like to have a dessert once a week usually on the weekend.  I love this dessert because it is a healthier option as well but my kids like it so much they don’t even care! I also love that it is a no cook option as it gets really hot here in the summer and turning on your oven is the last thing I want to do! I am big at trying to find treats that can satisfy our sweet tooth but not sabotage our efforts to control our insulin and eat nutritionally dense foods. I think that is why I usually gravitate to fruit desserts because you can get away with little to no sugar because you are naturally sweetening it with the fruit.

Making the recipe

You want to start off making the crust, or no shame in just using a store bought one like I do some of the time. Now lets mix up the fluff, start off with softened cream cheese, this is important because if it is to cold it will not blend well. If you want the filling to be smooth make sure you have softened cream cheese ( just leave it out for a hour or two based on the temp of your house).  You can add the lime juice as well if you want extra lime flavor, or leave out if you want just a light lime flavor. Mix the whipping cream before folding in to the filling. You can use any of your favorite fruits completely customizable. The jam coats the fruit like a glaze but it is equally as good without. If you are making this ahead of time you will want to wait to add the fruit to the top of the pie just before you are serving it.

What if I don’t like Ricotta

I am actually not a fan of store bought ricotta but try making it homemade, (recipe I like if you want to try it)it is a game changer. I really love homemade ricotta and it is really easy to make you just have to plan ahead. If you don’t want to make your own you could try subbing in cottage cheese I have not tried it but I would assume it would be similar. To get it smooth though you may want to use your blender when mixing the filling.

Sugar

If you don’t eat regular sugar, you can use monk fruit or stevia in this recipe. I prefer Lakanto Monkfruit sweetener, stevia tends to have a bitter after taste to me.

Berry Lime Fluff Pie

This is a spin off of a key lime pie with fresh berries on top. So easy no cook dessert for summer.

Ingredients
  

  • 1 graham cracker pie crust homemade or store bought
  • 1 pkg (8oz) cream cheese softened
  • 1/2 cup whole milk ricotta cheese
  • 3/4 cup powdered sugar**
  • 1/2 tsp vanilla extract
  • 1 lime zested
  • 1/2 cup heavy whipping cream
  • 1 1/2 cup fresh strawberries washed and quartered
  • 3/4 cup fresh blueberries washed
  • 1 tbsp raspberry jam optional

Instructions
 

  • In a large bowl or mixer, beat cream cheese, ricotta, sugar, vanilla and lime zest until smooth. About a few minutes. Transfer to another bowl and set aside
  • In mixer beat heavy cream until stiff peaks form; fold into cream cheese mixture.
  • Spread into pie crust, refrigerate, covered, at least 4 hours.
  • Just before serving, toss berries and jam together (if using) and spread over top of pie. If desired you could also serve with additional whipped cream on top.
