My version of the Viral Tik Tok Pasta

 

I cannot believe I have not shared this recipe with you yet. I am pretty sure I have made it weekly for the last month. Which if you know me is a lot given that most of the time I am to busy trying out new recipes to make the same ones again. I first saw a version of this recipe on TiKToK and new I had to try it. It is so easy and versatile. I have made so many different versions depending on what was on sale on the supermarket or what I had available in my fridge, and every single one as turned out fantastic.

This is a great dish that will help you eat the rainbow in vegetables, or clean out your fridge recipe. You can make it gluten free depending on the pasta you use. You can also make it meatless by eliminating the meat, if you still want added protein add a can of chickpeas or package of tofu. If you are looking for low carb you could use a low carb alternative pasta, such as the wonder noodles. This pasta dish can really be whatever you like and enjoy. I have personally made it meatless (I only cook it for 20 minutes then), with sausage, and with chicken. I have added just a couple of veggies or multiple veggies, I just make sure that if I am adding more of a variety I do a little less of each one. You want them all to fit on the sheet pan and not be to crowded. If they are to crowded they will steam and not roast.

When making it I like to prep all my ingredients first, chopping the meat and veggies and placing them on the sheet pan. I put the feta cheese in the middle of the sheet pan and then drizzle the olive oil and seasoning over all of it and give it a quick toss to ensure that everything has oil and seasoning. This recipe is not spicy keeping it kid friendly but if you like more spice feel free to add more red pepper flakes (which I usually do on my own dish). Then put it in a hot oven and cook 20-30 minutes depending on what ingredients I am using. This recipe comes together so quickly and is one of my go to recipes. Easy and Delicious Feta Pasta

Ingredients
  

  • 1 Yellow bell pepper chopped
  • 1/2 Red onion sliced
  • 2-3 boneless skinless chicken breast chopped
  • 1 pint cherry tomatoes
  • 1 zucchini chopped
  • 1 6oz feta cheese block
  • 4 garlic cloves peeled
  • 3 Tbsp olive oil
  • 2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • 1 16 oz bow-tie pasta
  • 2-3 handfuls of kale or spinach optional

Instructions
 

  • Preheat oven to 400 degrees F
  • Start by prepping and chopping all of your vegetables, and chicken. Spread out on a large cookie sheet pan. You can mix them together or keep them separate. Make sure you are using a big enough pan that the vegetables and meat are not overly crowded.
  • Add the feta block to the middle of pan. Pour olive oil, Italian seasoning and salt and pepper over all of the vegetables meat and cheese. Bake for 25-30 minutes until chicken is done and cheese is golden on top.
